Pampering Rose Treats for This Mother's Day

No 99 roses? No problem.
This Mother’s Day, we’re skipping the florist and diving straight for our ultimate happy place: the supermarket. What’s more alluring than the scent of fresh flowers would be the sight of scrumptious treats all laid out on the table and ready for Mum when she wakes. This year, we’re opting for a fresh spin on the usual rose bouquets and dishing them out in edible portions.
My childhood contains fond memories of watching Mum in the kitchen, trying out new recipes that she gathered from online or whipping up regular favourites. On this special day, it’s Mum’s turn to relish in her beauty sleep while we get busy in the kitchen (note: washing the dishes also included).
These recipes are made using the Finnish Plant Rose Petal Confiture, available exclusively on the Gryphon Tea Pantry. 1. Open-faced Bagel with Egg White and Rose Confiture
Ingredients:
- 1 Bagel (any flavour)
- 2 Eggs (egg white only)
- 1 Tbsp Olive Oil
Directions:
- Add olive oil to a non-stick skillet and let it heat over medium heat.
- Once the pan is hot, add in the eggs mixture and let it sit for about 20 seconds before stirring.
- Gently stir the egg every 10 seconds till the scramble is softly set.
- Remove from heat and let the eggs continue cooking for another 10 seconds before serving.
- Toast the bagel till golden brown.
- Top the toasted bagel with egg white scramble and a generous portion of the Finnish Rose Petal Confiture.
2. Oatmeal Scones with Yoghurt and Rose Petal Confiture
Ingredients:
(makes eight large scones)
- ¾ Cup All-Purpose Flour
- ¾ Cup Wholegrain Flour
- 1 Cup Rolled Oats
- 1 Cup Buttermilk
- 3 Tbsp Dark Brown Sugar
- ½ Tsp Salt
- 2 Tsp Baking Powder
- ½ Cup Dried Cranberries (or any dried fruits)
- 3 Tbsp Unsalted Butter, melted
- 1 Large Egg
- Finnish Rose Petal Confiture
Directions:
- Preheat oven to 400 degrees.
- In a medium bowl, whisk together flour, oats, baking powder, salt, brown sugar and dried fruits. In another bowl, whisk together butter, egg and buttermilk.
- Stir in the wet mixture to the dry mixture.
- Continue stirring till both the wet and dry mixtures are evenly mixed.
- Using a small ice-cream scoop or a tablespoon, drop batter onto a parchment lined baking tray.
- Bake the scones till golden brown, rotating the tray every 15 minutes.
- Once the scones are done, add a dollop of yoghurt and one tablespoon (or however much you fancy) of the Finnish Rose Petal Confiture before serving.
3. Chocolate Sponge with Rose Buttercream
Ingredients for the chocolate cake:
(serves 6)
- 1 ½ Cup Flour
- ½ Cup Cocoa Powder
- 1 ½ Cup White Sugar
- 1 Tsp Baking Powder
- 220g Melted Butter
- 4 Eggs
Directions:
- Preheat the oven to 180 degrees.
- Beat the eggs and sugar till almost white and fluffy. Then add in the melted butter and continue mixing till evenly mixed.
- Gently fold in the cocoa powder, flour and baking powder to the mixture.
- Bake for 25 minutes, or till a toothpick comes out clean.
Ingredients for the rose buttercream:
- 250g butter
- 120g powdered sugar
- 3 Tbsp Finnish Rose Petal Confiture
- 1 Tsp Rose Essence
- 2 Drops of Pink Food Colouring (Optional)
Directions:
- Beat the butter to a pale yellow.
- Add in the sugar, jam and colouring and mix till well-combined.
- Have fun and ice the cake!
Enjoy a warm oatmeal scone or hot toasty bagel for breakfast, then indulge in a fluffy chocolate sponge for tea time. Want an after dinner drink?
